After a long period of rain, the mistral returned to the valley of La Durance. He chased the clouds, giving us a beautiful blue sky of Provence. It's time to harvest the olives for the Wind Vintage. In recent weeks, we closely follow  developments in oil olives trees in our Mistral selection . Drying olives, fresh wind of the north will reduce bitterness and enhance the flavors of olive oil. The timing is optimal. The flavorings curve reached its peak. From now on, return oil will increase and quality decrease. The yield is never our goal. Only quality matters. For "Wind Vintage" we have selected more trees that give the oil more intense.
